Fluffy home made pancakes
is what we are always aiming at when we decide to give it a go on those weekends with extra time to prepare a “sophisticated” breakfast. In this house, my sister in law was the queen of pancakes, till today…
Today we are all going to learn an easy-to-make recipe, with little ingredients, and full of flavour and fluffiness. My children love it, and my husband loves me even more now [hahaha]
Ingredients:
- 2 cups of skim milk
- 1 egg
- 2 teaspoons vanilla extract
- 2 cups self-raising flour
- 1/3 teaspoon bicarbonate of soda (baking powder)
- 2-3 Tbsp. of brown sugar (you can use Stevia or any other substitute)
Methods:
This is the easiest part: just mix everything in a blender for a couple of minutes. After the mix is ready, heat a large non-stick frying pan over medium heat and, with a paper towel, add some olive oil to the surface (this is essential, as we are not using any butter or oil in the mix).
Using a ¼ cup mixture per pancake, cook two pancakes for 2-3 minutes or until bubbles appear on the surface.
Turn and cook for 2 more minutes or less until cooked.
Transfer to a plate and take a picture to the stack for Instagram! I know maple syrup is the classic topping,
but I do love to use low fat Greek yoghurt or Coconut Yoghurt with fruits on top instead.
They are D E L I C I O U S!
You should obtain by the end of the preparation, a stack of 15-17 pancakes.
